BREAKFAST & LUNCH MENUS
NO CHILL, ROLLED SUGAR COOKIES - FROM MRS. KUCERA
Ingredients:
1 cup softened butter
1 cup granulated sugar
2 teaspoons vanilla extract
1 egg
3 cups flour
2 teaspoons baking powder
Directions:
Preheat oven to 350 degrees
Cream together butter and sugar in the bowl of a stand mixer for a full 2 minutes.
Scrape down bottom and sides and add in vanilla and egg, mix until combined.
Add flour and baking powder to the bowl, mixing slowly at first but increasing speed as it comes together to form a dough. The consistency should be like play doh and you can add a little water or flour if needed.
Roll out on a lightly floured surface until ¼ to ½ inch thick. Use cutters to cut out desired shapes. Place on ungreased cookie sheet and bake 7-11 minutes until centers are puffy but before they turn brown.
