Utilizing IDDSI in School Safe Eating Plans
Elisa Thurman and Dr. Lily Glasgo
Description: The International Dysphagia Diet Standardization Initiative (IDDSI) is a well-known and utilized method of guaranteeing consistent textures for individuals with dysphagia. However, school-based practitioners may not have been taught the IDDSI guidelines and may be implementing outdated or inconsistent methods of texture modifications in their Safe Eating Plans. During this session, participants will learn the benefits of using the IDDSI guidelines, how to make decisions about choosing safe and least restrictive textures, and how to implement IDDSI guidelines with common school foods. This will be a didactic session with demonstration.
Audience: Intermediate, SLP, OT, Dieticians, RNsLearning Objectives:
○ Participants will understand the need for utilizing the IDDSI framework within the school setting.
○ Participants will learn how to choose appropriate textures based on the presenting needs of the child in the school setting.
○ Participants will be able to describe how to modify common school food to address student safety while guaranteeing the least restrictive environment.
