In the Culinary Classroom
This week our Advanced Culinary students made a recipe that is a combination of Italian risotto and South Africa's national dish, bobotie. Recipe is below for you to try it at home:
South African Bobotie-Spiced Risotto
Risotto:
1 Tbsp. Olive Oil; 3 Tbsp. Butter (divided); 1 Shallot, thinly sliced; 2 cups Arborio Risotto rice; 4.5 cups Chicken broth; 1/2 cup Parmesan cheese; 2 Tbsp. Thyme, chopped (divided); Salt & pepper to taste
- In medium saucepan, heat stock to simmer, then lower heat.
- In separate skillet, heat oil and 1 Tbsp. butter. Once melted, add shallot. Saute 2-3 min. until translucent.
- Add rice to skillet, stirring briskly with wooden spoon so grains are coated with oil. Saute for 1 min. until there is a slightly nutty aroma. Do not let rice brown.
- Add ladle of hot chicken stock to rice; stir occasionally until liquid is fully absorbed. When rice appears nearly dry, add another ladle of stock; repeat. Continue adding stock a ladle at a time for about 20 min. or until grains are tender but firm to the bite.
- Stir in remaining 2 Tbsp. butter, plus Parmesan cheese and thyme. Season with salt and pepper.
Bobotie
1/2 Yellow onion, finely chopped; 1 lb. Ground beef; 1/2 tsp. Salt; 1/4 tsp. Pepper; 3 Tbsp. apricot jelly or jam; 2 Tbsp. Curry powder; 1/2 tsp. anise; 1/2 tsp. Cardamom; 1/4 cup Currants; Dried apricots, chopped; Walnuts, chopped (optional)
- While risotto is cooking, heat oil in separate large skillet. Add onions and meat. Pan fry until brown, turning occasionally. Drain off excess oil; set aside.
- Add jelly, spices, currants, apricots and walnuts to meat mixture. Gently stir; add salt & pepper to taste.
To serve, top risotto with hot meat mixture.
