Happy Holidays From Pima JTED Culinary Happy Holidays From Pima JTED Culinary

A Time To Celebrate!

It has been a quick and food filled semester! Thank you to all of my students for all of your hard work, dedication and willingness to learn! I have never had 105 first year students before and it has been wonderful to get the chance to get to know and work with each and everyone of you! I appreciate your patience and the excitement you bring everyday! For my second and third year students, it brings me much happiness to continue to develop our skills together and to be able to spend so much of my week with you getting to know you even better!

Celebrate your achievements and come back rested and ready to continue on our journey to become a stronger team, more knowledgable people and more confident individuals!

Merry Christmas, Happy Holidays and the Happiest of New Years to you all. May you have a peaceful, safe and prosperous new year full of happiness, love and health. From my family to yours!

Vocab: Pre-ferment

Pre-ferments are dough starters, like a small batch of flour, water, and yeast/starter, fermented ahead of the main dough to build complex flavors, improve texture (gluten), and increase shelf life in bread baking; common types include wet Poolish, stiff Biga, sourdough Levain, and "old dough" Pâte Fermentée, each offering unique characteristics by breaking down starches and proteins over hours, creating a richer, more flavorful, and structured final loaf.

ARIZONA STATE TAX CREDITS

We would love to have your tax credit dollars for Culinary here at the Bridges. You can donate up to $250 per individual or $400 per couple at a dollar for dollar credit on your Arizona taxes. Look for more information coming soon with forms and procedures in order to get our kitchen some extra supplies to teach your students with.

My Favorite Holiday Breakfast

One of my favorite memories of the holidays growing up was my mother making cheese blintzes with macerated strawberries and whipped cream. To this day, I crave this breakfast treat! I encourage you to try it over the holidays and invite yourself to a little bit of my family and one of my favorite food memories!
