PUMPKIN SCONES π
FROM MRS. KUCERA
Scone Ingredients:
2 ΒΌ cup flour
2 Β½ teaspoons baking powder
1 teaspoon salt
Β½ teaspoon baking soda
2 teaspoons pumpkin pie spice
β cup light brown sugar
1 stick of butter, cold and cubed
Β½ cup pumpkin puree
ΒΌ cup buttermilk
1 egg
Glaze Ingredients:
1 cup powdered sugar
1 tablespoon canned pumpkin puree
1 tablespoon milk
ΒΌ teaspoon cinnamon
Directions:
Preheat oven to 400 degrees and line a large baking sheet with parchment paper
Cut 1 stick of butter into cubes and place in the freezer until ready to use.
In a large mixing bowl, combine flour, baking powder, salt, baking soda, pumpkin pie spice and sugar until well combined. Break up any lumps of brown sugar.
Using a pastry blender, cut the butter into the flour mixture until the size of small peas.
In a separate, small bowl, whisk together pumpkin puree, buttermilk and the egg.
Add the pumpkin mixture into the bowl of dry ingredients and mix with a spatula or wooden spoon just until starting to combine.
Flour your counter and pour out batter.
Pat into a rough rectangle.
Fold the rectangle like a letter. (fold bottom β up and then top β down)
Pat it out into a rough rectangle again and fold like a letter, going the opposite direction.
Cut in half. Gently pat each half into a ΒΎ in thick, roughly 6 inch circle.
Cut each circle like a pizza, making 6 slices from each.
Place onto baking sheet, about 2 inches apart and bake for 12-15 minutes until golden brown.
While in the oven, place all glaze ingredients in a small bowl and mix together until smooth. If too thick, thin it out with a splash of milk.
Once scones are done, let them cool for a few minutes and top with glaze.
